Heat sugar, water, lemon juice in small saucepan and cook until sugar is
dissolved (no need to stir) and syrup becomes a light caramel color, about
310°F if using a thermometer. Add balsamic vinegar and carefully swirl.
Pick tomatoes with toothpick or cocktail pick and carefully dip into caramel.
Place on parchment-lined sheet pan to cool completely before serving.
• Cherry tomatoes – 1 box
• 250 grams of sugar
• 75 grams water
• Few drops of lemon juice
• 1 tsp of balsamic vinegar
